I went to Prague a few years ago for New Year's eve (highly recommended!) and stayed at the Mamaison hotel which was one of the cheaper boutique hotel options. It was a little farther from the center, but taxis are plentiful and cheap in the winter, and in the summer, the walk I would imagine is very nice. The place was spotless, the room a huge beautiful suite with all of the amenities. I want to stay in all of their locations!
